Happy Halloween!


Last night, we visited with friends and checked out their awesome Princess Peach and Bowser costumes made by Laura herself.


Then we went to a club and danced to 90's music. They had a photobooth!

This morning, we rolled out of a bed and went to breakfast.

Then we went to an antique show. I really suck at them. I get blurry eyed and start yawning. Too much to look at. I think I browsed through about two thirds of it and had to take a break. But I did find some cute owls!


Hope you are all having a great time trick-or-treating! We are staying home to carve pumpkins and watch movies. And possibly eat a lot of candy because we only got a couple of kids at our door.

Tuesday is my birthday (yay!), so this weekend is my 4-day weekend birthday extravaganza! We are going to start it tonight with a Halloween party and then we are going dancing. Happy early Halloween everybody!

Recipe: Butternut Squash Pie


I got a HUGE butternut squash in our veggie bin last week and it was sitting on our counter staring at me. So finally, I battled the gigantic squash, chopped it up and made it into a pie!

1 frozen pie crust (I used a yummy gluten free one)
1 1/2 cup(s) (about a 1-pound squash) butternut squash, cooked, mashed 
1 cup(s) milk
2/3 cup(s) packed light brown sugar
1/2 cup(s) heavy or whipping cream (I substituted blended cottage cheese)
2 tablespoon(s) granulated sugar
1 tablespoon(s) margarine or butter, melted
1 1/4 teaspoon(s) ground cinnamon 1/2 teaspoon(s) ground ginger
1/2 teaspoon(s) ground nutmeg
1/4 teaspoon(s) ground cloves
1/8 teaspoon(s) salt
2 large eggs

To cook squash in microwave oven: Cut squash lengthwise in half; remove seeds. In shallow microwave-safe baking dish, place squash cut side down in 1/2 inch water. Cook on High about 6 minutes; turn squash over and cook 6 minutes longer or until fork-tender. Or, to cook in conventional oven, place squash halves in shallow pan and bake at 400 degrees F 35 to 45 minutes until tender.

Preheat oven to 425 degrees F. Make a foil shield for edge of crust: Cut 12-inch square piece of foil; fold into quarters. Cut out center and round off edges, leaving a 2 1/2-inch-wide ring. Unfold ring; set aside.

Prepare Squash Filling: In large bowl, with wire whisk, beat all filling ingredients until blended. Pour squash mixture into pie shell.

Place foil shield over edge of crust to prevent overbrowning. Bake pie 40 to 45 minutes, until knife inserted 1 inch from edge comes out clean. Cool pie on wire rack. Top with whipping cream and devour!

P.S. I had leftover butternut squash filling and made cupcakes.

It's that time of the year where we curl up on the couch, snuggled up with the afghans and watch scary movies. 

We have watched some we haven't seen before.

Of course, we need to watch some of the classics!
