When people get to know me they find out that I am pescetarian, which is usually followed up with, "What do you eat?". My brain goes blank and I can't think of any good examples. I eat food, just not with meat! So I decided to take pictures with my phone of what I made this week to share with you, along with the recipes so you can try it too. They are quick, yummy and vegetarian!
English Muffin Pizzas
The mister used to make these with his mom from the Teenage Mutant Ninja Turtle Cook Book! They are great when you are craving pizza. Cowabunga!
You Need:
Whole Wheat English Muffins
Jar of Pasta Sauce
Grated Italian Cheeses
Sliced Mushrooms
Sliced Black Olives
Toast english muffin. Spread with sauce and pile on cheese, mushrooms and olives. Bake 400° for 10 minutes.
Penne Pasta with Broccoli and Veggie Sausage
This is a cheesy and hearty meal that makes great leftovers and perfect for summer.
You Need:
Whole Wheat Penne Pasta
Olive Oil
Broccoli
Jar of Pasta Sauce
Grated Italian Cheeses
Veggie Sausage
While penne pasta is cooking, slice veggie sausage and brown in a tablespoon of olive oil. Heat sauce in a large pot on medium, add a few tablespoons of olive oil and a cup of the hot pasta water. Add broccoli and cover to cook until tender. Turn off heat and uncover. Toss in cooked pasta, sausage and cheese.
Caprese Salad
Mmmm...one of my favorites.
You Need:
Basil
Tomatoes
Fresh Mozzarella
Olive Oil
Balsamic Vinaigrette
Salt & Pepper
Wash and tear basil into medium size pieces or use whole leaves. Slice mozzarella and tomatoes. Layer everything in a dish and drizzle with olive oil and balsamic vinaigrette. Season with salt and paper.
Mmmm, now I am hungry again! Part 2 is coming very soon! And I promise I don't eat just cheese :) Although, I wouldn't mind...

I'm a vegetarian too and I'm exactly the same when someone asks me my mind goes COMPLETELY BLANK, and all I can say is 'er...food?' which often gets strange looks.

Yes, thank you for this! My boyfriend recently went vegetarian and I am having the hardest time thing of things to make for dinner. I feel like we are eating the same thing all the time, but I love the little pizza idea! Quick and sounds super tasty.
If it weren't for my carnivorous husband...I would go for the pescetarian thing. I love seafood, but could do without the meat, chicken and pork. As it is...I eat meat probably 3 times a week. I cook meat for Hubby and the daughter and just leave it off my plate, at times.
