What Does a Vegetarian Eat? Part 2

Zucchini Bread

I have made this before with yellow squash but I just used zucchini this time. It is best warm and with a little butter. We can't stop eating it! You can find the recipe here.

Thai Red Curry

I love Thai food! I need to make Thai Iced Tea and Mango Sticky Rice to go with this next time. I served it with rice which can be spooned into the curry.

You Need:
Thai Coconut Milk (2 cans)
Vegetable Oil
Butter
Thai Red Curry Paste
Firm Tofu
Green Beens
Bamboo Shoots
Zucchini
Basil

Slice tofu into bite size pieces and brown in a tablespoon of vegetable oil, on both sides. Slice zucchini into bite size chunks and brown in a tablespoon of butter. Empty cans of coconut milk into a large pot and heat on medium high. Add 2-6 tablespoons of red curry paste until level of spiciness preferred is achieved. Stir until thoroughly combined. Add green beans, bamboo shoots and zucchini and cover and cook until beans are tender. Add tofu and basil then serve.

Rice Cakes and Peanut Butter

My easy peasy breakfast. Directions are obvious ;)

You Need:
Lightly Salted Rice Cakes
All Natural Peanut Butter

Now you know the kinds of meals I eat and you can try it too. Even if you aren't vegetarian, it will certainly make your taste buds happy!

P.S. I would like to also point out my excellent shopping and meal planning skills. We got a huge zucchini which I used to make zucchini bread and the curry. The jar of tomato sauce and bag of grated cheese was used for the pizza and pasta. The basil was used for the caprese salad and curry. Yay for thriftiness!

I love rice cakes so much. I always put avocados, tomato slices, pepper, and sweet chili sauce on them. Amazing!

I never get tired of rice cakes and peanut butter. Add banana and the perfection level rises!

meal planning is crucial, and yet i still find myself at the grocery multiple times a week. i'm weird though, i LOVE grocery shopping. maybe it's partially because i can't go real shopping lately, but last time i went the check out girl commented about my "awesome savings." anyway, i also love thai food, and bought stuff to make panang this week. i bought that thai true (oregon) brand. have you tried it? the labels are cute. 

PS i wish i had someone to give me zucchinis. i'm jealous of your hook up, and miss having a ton from the garden at home. that's my fave veggie and i am dying to make this recipe: http://simplyrecipes.com/recipes/zucchini_and_spinach_gratin/ minus the bacon for a vegetarian, :)

I'm not vegetarian, but I'm dairy -free for the time being (I'm nursing and my son has a dairy intolerance).  I've entered the world of vegan baking and am eating more vegetarian foods.  I really like it (especially as an excuse to eat Thai food all the time)!
