Jasmine rice with stir fry vegetables and curried tofu
Mahi Mahi pan-fried with quinoa and kale
Chocolate chip peanut butter cookies
Quinoa with curry, squash and yams, with spinach salad and toasted naan
Here are some recent meals that I have cooked up for my pescetarian self. Some the mister enjoyed and some not so much. But I liked them all! I try to buy mostly vegetables and makes meals around that. We used to do the delivered vegetable bin but we just couldn't keep up with it. We had beets and apples coming out of our ears! Shit, I couldn't eat another beet and I actually enjoy them.

oooh! will you post your curry tofu recipe?
Ooh they look good! Please post recipes.
That quinoa looks amazing! My husband makes a lot of dishes with chunks of tofu in them but even after four years of being a vegetarian, I can't get used to that stuff. Wish that I could though.
Love your site! So glad a friend referred me this blog.
the mahi mahi looks delicious! i love kale so so so much! i put it smoothies oh and there is a kale salad by my work that i am totally obsessed with. we mostly veggies and meat twice a week. oh the fried egg pizza i was telling you about was totally yummy. i can't remember if you eat eggs but if you want i can give your the recipe just let me know. we also used to do a veggie box and yea it was sooo much. i didn't mind, we cooked every night while we usually do anyways but it was more then we could eat and they offered only one size. :(

Everything looks fantastic! How do you manage to make time for all this cooking? After 9-5 job with a lengthy commute I'm always ready to just eat out.
You seem/are such a cool girl I have so many questions I would love to ask you. Whats the best way to contact you? Dear Lord I sound like a stalker.....
what all went into the quinoa? looks and sounds awesome!
That Mahi Mahi is calling my name. That was the fish that turned me on to eating fish. :)
yummm!
This all looks so nourishing and yummy! I've been super slack with cooking lately but posts like this really inspire me to get my butt in the kitchen! Thank you :)

yum! plus pb&chocolate chip cookies are one lovely combo of flavors :)
those dishes looked good! I am still trying to find a word for a whatever my new dietary lifestyle is, Pescan? Vegan-ish? I am basically a vegan who eats seafood. Anyway, it is always helpful to see what others are eating on their chosen food paths! Also, who knew how much we all had been missing by not eating quinoa? That stuff is delicious!

All of this looks seriously delicious!
I'm curious about how you manage to trim your own hair. I have very short hair, and the back of neck and the ear areas are a disaster within 2 weeks.
It was yummy!
I talk a little about cutting my own hair here- http://www.nearsightedowl.com/2011/11/diy-pixie-haircut.html
Yes quinoa is so good and filling! I think you can call yourself...semi-vegan pescetarian!
I eat so much pb! There were tasty. I realized I already had everything to make them and whipped em up!
We get lazy too...but eventually you run out restaurants that you aren't sick of haha. We make a lot of quick meals to keep us in the kitchen :) enjoy that zucchini!
It definitely has a good earthy flavor!
Let me remember! Yams, zucchini, yellow squash, olive oil, curry powder and s&p of course. I might be missing something else I threw in...but that's the basics. I cooked the veggies separate doing the potatoes first so they would be soft. It made a lot of meals!
Thank you! I am lucky to only have a 5 minute commute so that gives me extra time...and I stay up really late :/ the mister also does a lot of cooking and chores which I am so thankful of! I would love to talk to you! You can find me on twitter or gtalk (links on the left)
I want to try a kale salad. Looks yummy and fresh! I definitely eat eggs...lots of them haha. Send me the recipe!
The mister doesn't like tofu too much but he likes how I do it. I slice it up and pat it dry and rub in spices likes curry and then pan fry them in a little oil until nice and brown.
Thanks! I might write them out and post it. I threw a lot of it together :)
Sure! I will keep it in mind next time I cook it up.
