Recipe: Easy Browned Sweet Potatoes


You Will Need
2-3 sweet potatoes
Butter (I use Earth Balance or Smart Balance)
Sea salt
Griddle or pan
Microwave

Directions
Poke holes in the sweet potatoes with a fork and microwave on a paper towel for 5 minutes at a time until soft (usually about 5 minutes per potato but can vary). The skin will start to separate from the potato and a little sugary juice will start to leak out. Let cool, or if you are in a hurry like me and don't plan ahead, remove the skins carefully. I chopped mine up so they would cool faster and then removed the skin from each coin shaped potato. 


Melt the butter in a pan on medium heat and throw on your skinned and sliced potatoes. They should already be cooked so you are just browning them. Sprinkle on a couple pinches of sea salt. Don't move around the potatoes too much so they have time to brown and don't fall apart. 


Within 15 minutes, you can have perfectly browned up and cooked sweet potatoes for any meal! I think they are delicious with a couple eggs for breakfast or a garden burger for dinner. You can also mash them up with a little nutmeg. Sweet potatoes are one of my favorite foods!

I love to eat my sweet potatoes like a regular baked potato with sour cream, salt & a little black pepper. Yummy, sweet, tangy & salty!

I wish my son was more keen on sweet potatoes. We decided to eat more plant-based foods this year and sweet potatoes are a great vegetarian/vegan pick. Sadly, he's never liked them.

I don't do the sour cream on sweet potatoes, but I like them with butter, salt and pepper. If I'm doing them dessert style, I like butter and cinnamon sugar. Never been big on the marshmallows with sweet potatoes. It seems like sweetness overkill to me.

I used to hate sweet potatoes when I was a kid, but now that I'm older I'm totally in love with them. I like to make a batch of sweet potato fries in the oven. They're the perfect T.V snack.
